Professional Profile
Caroline studied Nutrition and Dietetics at Kings College London, qualifying with distinction in 1990. Since then she has worked as a Specialist Dietitian in the NHS at a variety of teaching Hospitals including Charing Cross and Westminster, St Marys (Paddington), Newcastle Royal Victoria Infirmary before settling on the South Coast at Royal Sussex County Hospital, Brighton in 2002. Specialities include Gastroenterology (irritable bowel), Oncology, Malnutrition/ Nutritional Support, HIV, Community Development work, Obesity and Bariatrics, Mental Health (including dementia).
Caroline is a very experienced freelance dietitian and has worked in Private Practice since 2004 and joined the Montefiore Hospital when its doors opened in 2012. She is passionate about the important role food and nutrition plays in health and wellbeing and offers practical and realistic individualised nutrition care plans and ongoing support. Her experience over the last 28 years, in a wide variety of clinical specialities brings a wealth of dietetic knowledge into her consultations.
Caroline was one of the first dietitians in the UK to be fully trained in the low FODMAP approach (low fermentable carbohydrate diet) for irritable bowel and she has great success and extensive experience in this field. Helping hundreds of patients manage their symptoms and forming individualised nutrition and lifestyle plans.
She works closely with the hospital consultants and GPs to provide a comprehensive dietetic service and is an integral and core member of the multidisciplinary team clinics at the Montefiore: The Sussex IBS clinic and Brighton Bariatric Service.
Personal Profile
Caroline like many dietitians is a complete foodie and loves experimenting with recipes and adapting them in the kitchen -changing flavours and ingredients always thinking about the needs of her clients. She believes that food should be a great pleasure in life and enjoys trying out the wonderful selection of restaurants in the Brighton and Hove area with her husband and 2 teenage children.
She is a keen swimmer and enjoy Pilates and walking and spending time with friends and family.
